Honey Whipped Ricotta with Peaches + Mint

Ingredients:

Ricotta with Peaches and Mint
  • 15 oz whole milk ricotta cheese

  • 2 tbsps honey

  • 1 peach, diced.

  • 4 fresh mint leaves, julienned. Set aside for garnish

  • 1 baguette, 1 inch slices

Directions:

Start by whipping the ricotta cheese, you can either do it by hand in a mixing bowl or have your electric mixer do the work for you. Add in the honey and mix until light and fluffy, about 3-4 minutes

Dice the peach and julienne the mint leaves, set aside. Slice your baguette into 1 inch slices and place on a sheet tray, brush with a little olive oil and place under the broiler. Keep a close eye on it, you only want to crisp your baguette.

Spoon the ricotta mixture on your sliced baguette. Top with the peaches and fresh mint. ENJOY!
